If your venue has a lot of WIFI signals around it could be making your connection to the tablet really bad, if you are using an android device, you can hardwire the connection with a OTG cable.
Otherwise bring a small windows laptop with you and run hardware manager on it and pick a different WIFI channel than the one currently in use in hardware manager.

no sorry, hardwired isn't compatible on ipad. its nothing the developers can do about, its something with apple.
you can use your own spare wifi router to make your own locked down and stabilized wifi signal. See PDF attached.
