Is there a special cable that you need to have going from the controller to the dimmer packs? Can you just use normal mic cables?

As long as the Mic cables are good quality you should have no problem . Make sure you have a terminator if you use more than a total of 100 ft.

when you have a long dmx chane or like support said more then 100 feet...what you do is that on your last fixter or dimmer pack you put the line terminator...and what i dose is terminat the line basicly (terminat the information) if you don't then some times your light's will go whacko on you

The terminator is a 120 ohm 1/4 watt resistor across pins 2 & 3. It keeps the Digital signal from repeating on it self. usually it is in a male XLR plug.
