There seems to be little information on how to replace offline scenes on MyDMX GO. Is it only possible with mydmx 2 / mydmx 3 software full versions? Any other way to update the scenes in MyDMX GO.

Sorry for not clarifying – I am talking about the ADJ MyDMX GO device.
As far as I can understand, the ADJ MyDMX GO device can be operated in a stand alone mode without connecting the MyDMX GO app to it. The scenes/presets on the device can be changed with the arrow buttons on the device? There seem to be some scenes/presets already on the device because when I disconnect the MyDMX GO app, the lights are changed into a different state than was the last state in the app.
Well yes and no, the GO has stand alone memory for if you use it with MyDMX 2.1 or 3.0 software, which you need to pay for a license to use the GO box on those programs.
The GO app does not let you store THOSE scenes into the stand alone memory of the hardware, the reason there could be a few in there already is it comes like that from the factory based on generic 3ch or 4ch RGB or RGBW LED par fixtures.
So, no you cannot store scenes/looks created in MyDMX GO app, but you can in MyDMX 2.1 or 3.0 software after you purchase the necessary license from store.dmxsoft.com

Do I need the full mode version of the MyDMX 2.1/3.0 software or would also the express version be enough to save scenes to the MyDMX GO device?
You could do Express mode for 3.0 and be fine. You may need or want to upgrade/purchase more stand alone channels as i think it comes with 128 total stand alone channels out of the box, so if you are using more than 128 DMX channels total, then you'll need to buy a pack of channels.
