I'm assuming this is the way I can run additional fixtures (eg uplights, mirrorball spots etc) independantly of the main show - without having to go through every single step in each scene

a new (or 2nd) Universe will alow you to add more fixtures into the show you are creating. A single universe has a total DMX channel value of 512 channels. Add a second universe and now you have 1024 channels. Etc Etc Usually you do this when you have several lights or multiple types of lights. These are not independant from the main show. However, MyDmx1.0 only supports a single universe.
