Will it cause damage to place hazer fluid in a fog machine? Does it really matter?
The reason I ask is bc I have a hazer that takes fog fluid, but I have a gallon of haze fluid.

Yes, it will damage the fogger to use haze fluid. It's different stuff and it works differently.
Read the directions, and don't mix and match. Use what the product says it uses. Most likely this hazer is able to output less fog fluid at a time and over longer periods of time.
